The Colonial Dutch loved these cinnamon sugar butter cookies. They are crisp, light and have a decorative pattern created by the cinnamon and sugar being pressed into the cookie before baking.

    1/2 cup butter
    1 cup granulated sugar
    1 large egg
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    1/4 teaspoon salt

Cinnamon Sugar

    1/4 cup sugar
    2 teaspoons ground cinnamon

1.  Preheat the oven to 350 . In a large bowl, cream the butter
and sugar. Beat in the egg and vanilla. Sift in the flour, cream
of tartar, baking soda and salt. Stir to form a firm dough.

2.  Mix sugar and cinnamon in a small bowl. Roll a
tablespoonful of dough into a ball, then in cinnamon sugar.
Repeat with the rest of the dough.

3.  Arrange on a baking sheet; press with the base of a glass.
