Parmesan Salad

Salad Dressings 101

Serve this salad anytime you would normally serve a Caesar salad. This dressing doesn't have anchovies and is much easier to make. Caesar salad was originally invented at Caesar's Palace in Tijuana, Mexico by Caesar Cardini when his other ingredients were running low. Add croutons for a more authentic salad.

Salad

    1 package (6 cups) mixed Italian green salad or romaine
    2 medium carrots
    4 medium radishes

Italian Parmesan Dressing

    ½ cup mayonnaise
    ¼ cup Italian dressing
    2 tablespoons grated parmesan cheese
    1 ½ teaspoons whole milk
    Freshly ground Tellicherry peppercorns
    Freshly shredded parmesan cheese

1.  Rinse the lettuce and pat dry with paper towels or use a salad
     spinner. Place the lettuce in the refrigerator. Chill 4 plates.

2.  Set out chilled plates. Arrange lettuce on each plate. Grate         
     carrots and radishes evenly over each serving.

3.  In a small bowl, mix the mayonnaise, dressing, cheese and
     milk. Top each salad with the dressing, freshly ground black     
    
peppercorns. Sprinkle with more parmesan cheese.

     Makes 4 salads
