Mango Lassi

Sliced Mango in Light Syrup

This is a delicious way to serve yogurt Indian style. After freezing the mango slices, the drink will be naturally cold. Mangoes originated in India and now this fragrant fruit is cultivated all around the world. You may find mangoes in various sizes. They all have a large, flat seed which must be removed. This is easily accomplished if you cut the mango almost in half, cutting around the seed. Then, pull out the seed which will still be attached to one side of the mango. You can then peel the mango and slice the golden orange flesh. Look for yellow/orange mangoes with a red blush. Green mangoes are used in Indian cooking. In this recipe, look for a ripe mango.

    1 fresh ripe mango
    1 (6-ounce) custard-style vanilla yogurt
    1 cup orange juice
    3 ice cubes

1.  Peel and slice the mango. Freeze the slices for a colder drink.

2.  Process the frozen mango slices, yogurt, orange juice and
     ice in a blender until smooth.

3.  Pour into two 16-ounce glasses and serve with straws.

     Variation: You can substitute similar textured fruits, like
      peaches. Substituting various fruit juices can make this drink
      very exotic. Try passion fruit or papaya juices.

      Makes two 16-ounce drinks
