Green Beans with Bacon

 

Keep a bag of French beans in the freezer and use up your leftover bacon, onions and mushrooms in this side dish. It is easy to remove the meaty portion from the bacon. I use a kitchen shears and then throw out all the fat. Once you have removed the fat, simply snip up the meat with the shears.

    2 slices bacon, fat trimmed off and bacon chopped
    1 tablespoon butter
    ˝ cup chopped yellow onion
    4 large white mushrooms, sliced
    4 cups frozen French-style green beans
    Garlic salt
    Seasoning salt
    Ground black pepper

1.  In a 5-quart sauté pan, fry bacon in the butter. Add the
     onions and mushrooms. Cook until onions are translucent.

2.  Add the beans and stir occasionally until soft.

3.  Season to taste with garlic salt, seasoning salt and pepper.

     Hint: This is a perfect side dish for steaks or chicken.

     Makes 6 servings
