Toasted Cheese Sandwiches

Tomato soup and grilled cheese sandwiches are comforting on a cold winter’s day. These sandwiches are made with Cheddar cheese, which originated in England. Orange Cheddar cheese is actually colored with a natural dye called annatto made from the pulp surrounding triangular annatto seeds. Caribbean Indians were once known to paint their faces with the same coloring. My husband makes these under the broiler, but I prefer to fry them in a frying pan. If you butter the slices before toasting, they will have an even crispier texture. Shredded mozzarella is also a delicious cheese for these sandwiches. 
 


    4 slices buttermilk bread
    4 large slices Cheddar cheese
    Butter


1. Heat a large frying pan over medium heat.

2. Butter one side of each slice of bread and then fry two slices
    with the butter side down. Top each piece of bread with one
    slice of cheese.

3. When the cheese has melted, top with another buttered slice
    and turn the sandwich over to toast the other side.

4. Set the toasted sandwiches on a breadboard and slice from
    corner to corner, twice. Serve each sandwich as four little triangles.
