Southern Ambrosia

Ambrosia is a heavenly combination of fruit and sour cream served at Christmas time in the South. A segmented citrus is easily achieved by cutting away the citrus peel with a small sharp knife. Cut down between a membrane and the fruit attached to the V-shaped base. Tilt the knife and lift segment.

    2 cups fresh pineapple, diced and drained
    1 cup fresh orange segments
    1 cup seedless grapes, cut in half
    1 cup miniature marshmallows
    ⅓ cup flaked coconut
    ½ cup sour cream
    2 tablespoons clover honey
    1 tablespoon vanilla syrup

1.  In a large bowl, toss the drained pineapple, oranges, grapes, marshmallows, and coconut.

2.  In a small bowl, blend the sour cream, honey, and vanilla
     syrup. Toss the fruit with the sour cream dressing.

3.  Refrigerate for at least 4 hours in the serving dish.

     Hint: Serve as a side dish for Christmas or Thanksgiving
     dinner. It balances the savory options.
