Scrambled Eggs with Spinach

    2 ounces baby spinach
    1 tablespoon butter
    2 eggs
    Seasoning salt
    Freshly ground Tellicherry peppercorns

1. Melt the butter in a large frying pan over medium heat. Add the spinach and
     cook just until it looks wilted. Place in a small food processor and process
    just until it looks like a puree.

2. Place spinach in a medium bowl. Add eggs, seasoning salt and pepper. Whisk
     everything together until well blended.

3.  Fry egg mixture in frying pan until nicely scrambled.

4.  Serve with toast.

    Makes 1 serving
