Peach Sherbet

Marco Polo first brought the recipe for ice cream to Italy after a journey to Japan. Italians then made ice cream by sending for ice from the surrounding hills. We made this sherbet from peaches grown in our backyard in Africa.

    2 cups diced and peeled ripe peaches
    ⅓ cup granulated sugar
    1 ½ tablespoons fresh lemon juice
    ½ teaspoon vanilla extract
    ¼ teaspoon almond extract
    Pinch salt
    1 cup half-and-half

1.  In a blender, process the peaches, sugar, lemon juice, vanilla       
     extract, almond extract, salt and half-and-half. Pour into a 
     freezer bowl of an ice cream maker.

2.  Freeze 30 minutes. Scoop into a plastic freezer container and   
     freeze until firm or leave in the freezer bowl and set the bowl
     in the refrigerator freezer for another 30 minutes. This speeds
      up the freezing process.
