Orange Berry Sorbet

The tastes of summer may be enjoyed in the winter when you use frozen berries. This is a very easy-to-make sorbet which will freeze quickly and will complement scoops of vanilla ice cream. Serve with a mint leaf or a twirl of lemon peel.

    1 cup boiling water
    ½ cup granulated sugar
    1 (12-ounce) bag frozen raspberries
    1 cup cold orange juice made from concentrate
    ¼ teaspoon vanilla extract

1.  In a small bowl, dissolve sugar in water. This will take a few   
     minutes. While you are waiting, place the frozen raspberries,     
     orange juice and vanilla in a blender. Pour in the sugar water
     and process until smooth.

2.  Press through a large sieve over bowl. The mixture will be
     icy and ready to freeze.

3.  Set up ice cream maker; pour berry mixture into freezer bowl.
 
4.  Turn the ice cream maker on and freeze for 30 minutes,
     then place freezer bowl in refrigerator freezer for 1 hour.

     Makes 4 scoops
