Garlic Lemon Pepper
Tenderloin Roast

This roast not only cooks fast, the gravy is easy to make.

Roast

    1 (3-pound) tenderloin roast
    2 garlic cloves
    Olive oil
    Lemon pepper seasoning

Lemon Pepper Gravy

    ¼ cup all-purpose flour
    2 cups water
    2 teaspoons beef base

1.  Preheat the oven to 500 .

2.  Place the roast on a rack in a nonstick roasting pan. Peel the
     garlic and slice into thin slivers. Make slits in roast and insert         
     garlic slivers. Rub oil into the meat, cover with lemon pepper.

3.  Place the roast in oven. Turn the heat down to 450
and
     continue to cook the roast for 30 minutes.

4.  Reduce heat to 375
, roast until a thermometer registers 140 .

5.  Remove the roast and place roasting pan on a burner over
     medium heat. Add the water and use a whisk to loosen tasty 
     bits from the base of the pan. Mix the flour with a little water 
     to make a thin paste. Whisk in some of the hot liquid then pour 
     back into the roasting pan. Stir until the gravy thickens.

     Makes 4 to 6 servings
