Bulgur Salad with
Currants or Raisins

Bulgur is wheat in its natural state, therefore it is extremely healthy. Currants or raisins bring a sweet flavor to this salad.

    1 cup bulgur
    3 cups boiling water
    ¼ cup chopped fresh parsley
    2 tablespoons chopped green onions, white portion only
    ⅓ cup currants or raisins
    2 tablespoons sliced almonds
    2 tablespoons fresh lemon juice
    2 tablespoons olive oil
    ¼ teaspoon seasoning salt
    Freshly ground Tellicherry peppercorns
    Lemon slices
    Fresh parsley sprigs

1.  In a large bowl, mix the bulgur and water and let it stand
     covered for 2 hours or until most of the water has been
     absorbed. Drain well for at least 5 minutes.

2.  Stir in the parsley, onions, currants or raisins and almonds.

3.  In a small bowl, mix the lemon juice, oil and salt. Toss with
     the bulgur and serve at room temperature. Garnish with
     lemon slices and parsley sprigs.

     Makes 4 to 6 servings
