Black Rice Pudding

Northern Thailand rice pudding is heavenly when served with coconut milk. It may also be served for breakfast in place of oatmeal. Glutinous rice contains less starch but has more gluten to absorb lots of liquid. This causes it to stick together. This rice must be soaked for 24 hours or it is impossible to cook.

Rice Pudding

    1 cup uncooked black glutinous rice
    2 cups fat-free milk

Coconut Sauce

    ½ cup low-fat coconut milk
    3 tablespoons granulated sugar
    Pinch salt

    Granulated sugar to taste
    Decorative shredded coconut

1.  Soak rice in a nonstick 7 5/8 x 1 7/8-inch square nonstick     
     cake pan for 24 hours. Cover and bake in a preheated 350°
     oven 1 for hour.

2.  Make coconut sauce by mixing the milk, sugar and salt.

3.  Serve pudding in small bowls topped with coconut sauce,        
     sugar and coconut.
