Beef Soft Tacos

Taco means, “snack” in Spanish, however, this particular recipe creates very filling soft tacos. Any leftover bell pepper may be frozen for use in other recipes. For variety, use different colors of bell pepper.

Beef Filling

    1 pound lean ground beef
    ½ cup chopped yellow onion
    ½ green bell pepper, chopped
    ¼ teaspoon ground cayenne
    ½ teaspoon garlic salt
    ⅛ teaspoon ground black pepper
    ⅛ teaspoon chili powder
    1 garlic clove, crushed in a garlic press


    4–6 large flour tortillas
    Sour cream
    Shredded pepper jack cheese
    Salsa
    Shredded Lettuce

1. In a 5-quart nonstick sauté pan, brown the beef and then add
    the onions and green bell pepper. Fry for 5–10 minutes. Add the
    cayenne, garlic salt, pepper, chili powder and crushed garlic.
    Cook for 2 minutes.

2. Place spoonfuls of the meat mixture onto each tortilla. Top with
    sour cream, cheese, salsa and lettuce. Fold the end of one tortilla
    up over the filling, then roll up. Repeat with each tortilla.

    Makes 4–6 soft tacos
