Baked Potato Skins

Baked potato skins can be transformed into crunchy treats for the sports fans in your family who will love dipping them in sour cream. Serve with plenty of napkins.

Potato Skins

    6 baked potatoes
    Canola oil
    Seasoning salt
    Ground black pepper

Toppings

    Cheddar cheese
    Bacon bits
    Chives
    Sour cream or fat-free yogurt

1.  Cut each potato in half and scoop out the soft cooked potato. Save
     to serve later as mashed potatoes.

2.  Cut the potato skins into smaller pieces and lay them out on
     baking sheet. Spray or brush with oil.

3.  Sprinkle with salt and pepper and bake in a preheated 400

     oven until potatoes are crispy.

4.  Serve with cheese, bacon, chives and sour cream or yogurt.

     Makes 4 servings
