Apple Mango Chutney

Chutney adds a sweet spicy flavor to foods. It is the perfect
accompaniment to Chicken Bryani and other curried dishes.
My father traveled to India when I was very young and taught
me to love spicy foods. He makes the best lamb curry.

    ½ cup chopped yellow onion
    ½ cup dark brown sugar
    ½ cup apple cider vinegar
    1 teaspoon chopped crystallized ginger
    1 teaspoon lemon zest
    ½ cup raisins
    ½ teaspoon ground cinnamon
    ¼ teaspoon ground cayenne
    ⅛ teaspoon ground allspice
    ⅛ teaspoon ground nutmeg
    ⅛ teaspoon salt
    ⅛ teaspoon ground cumin seeds
    ⅛ teaspoon ground coriander seeds
    2 ripe mangos, coarsely chopped
    2 cups peeled and chopped Braeburn apples

1.  Place all the ingredients into a 3-quart saucepan. Stir well,
     then heat over medium heat until the mixture comes to a boil.

2.  Immediately reduce heat to low and cook 20 minutes.     
     Mixture will thicken. Cool completely in the refrigerator.

     Makes 8 condiment servings
